French Toast

French Toast (makes 40 pieces)

ingredients needed on cooking day
2 loaves bread
19 med eggs
3/4 C milk
Cinnamon to taste
1 tbsp vanilla
2 tbsp Sugar

Mix the eggs, milk, cinnamon, vanilla, and sugar in a large bowl.

Dip the pieces of bread in the egg mixture until coated.

Cook in a Med/Low skillet or electric skillet until lightly browned on each side.

Lay out on a cookie sheet using freezer paper between layers once cooled completely place in the freezer. Once frozen stack in a labeled freezer bag.

When ready to eat remove from the freezer and place in toaster on frozen pastry setting. Top with butter, syrup, and fruit!

This recipe makes a quick and easy breakfast lunch or dinner. My kids love to have breakfast for dinner!

Breakfast Sandwiches

Breakfast Sandwiches any way you want
Ingredients needed

Biscuits
sausage patties or bacon or canadian bacon slice
1/2 Egg per sandwich optional
Cheese optional

Decide how many sandwiches you would like to make and then head to the store with a calculator. I always try to buy sausage patties and biscuits when they are on sale so the ammounts in the package can vary. Odd amounts are never a problem because biscuits and sausage always get eaten up in our house.

Bake the biscuits until they are almost done (they will finish cooking when reheated)
cook sausage as directed
cook eggs like omelets with out the extras

To assemble let everything cool
Cut the biscuits in half
Fill biscuits with sausage, egg, and cheese
Wrap in foil or a paper towel.
Place in a labeled freezer bag.

If wrapped in foil these sandwiches are great for camping because they can be heated by the fire or on the grill. If wrapped in paper towels they are ready to go in the microwave.

Mini Chicken Cooking Day

Do you remember the chicken I cooked up a few days ago? Yes No Maybe LOL I cooked the chicken in the oven and then later some more in the crock pot to use in Freezer meals.

I made Chicken Fried Rice with vegetables. Done

Ingredients needed for freezer day 3 meals
6 Chicken Breasts
1 1/2 small bags Frozen Vegetables (your choice) we like peas, carrots & green beans
9 C cooked rice

Ingredients needed on cooking day
2 eggs
extra virgin olive oil
soy sauce

Cook the Chicken in the oven and allow to cool. Cut into bite sized cubes. While the chicken is cooking in the oven cook your rice until almost done quickly cool it down by placing in in the fridge.

When the chicken and rice are both cold place 1 cup of vegetables, 3 cups of rice, and 2 cups of cubed chicken in your freezer bag.

On cooking day thaw out your bag of rice, chicken, and vegetable mix. Heat 2 T Extra Virgin Olive Oil in a large skillet add to it the chicken mix. Cook until heated through. Move the mix off to the side and add a little oil to the pan. Scramble 2 eggs until well cooked then mix them with the chicken mixture. When mixed well add 3 Tablespoons Soy Sauce and pepper to taste.or your favorite seasoning.

PS you can scramble your eggs and freeze them with the rice mixture to save more time but I like the taste of the fresh cooked eggs better.



Taco Rice with Chicken Done

This is very simple and I don't typically use measurements but I will attempt to give you an idea.

Ingredients needed on Freezing day 3 meals
4 1/2 cups instant brown rice
2 packages taco seasoning mix
9C Chicken Broth
6C Cooked Shredded Chicken
1 1/2 cups shredded cheese
Flour Tortillas

Ingredients to have on hand cooking day
tomotoes
lettuce
salsa
sour cream


I throw the taco seasoning, chicken broth, and shredded chicken into a pot and cook on high until boiling then I add the rice. Cover and remove from heat and let stand for amount of time directed on box. You could also use regular brown rice just follow the cooking time on the package.

Once it is cooked through place it in the fridge to cool quickly.

Portion the rice mixture out into freezer baggies. Place 1/2 C cheese in a baggie, and put the rice mixture, cheese, and tortillas into a gallon size bag labeled Taco Rice with chicken.

On cookind day thaw. Then heat rice mixture in a oiled pan stirring often. spoon into tortillas and top with cheese, tomatoe, lettuce, etc.

There is a similar recipe available at www.30daygourmet.com I have tried many of their recipes and they have been good. Their site has provided me with inspiration for some of my recipes give them a look!

Bananna Bread

Banana Bread is a year round favorite in our house. We love to eat Banana Bread, and muffins. I ususally make this recipe in bulk during the holiday to give as gifts and because it freezes well I can make it when I have time and then give it as needed.

I made a batch of banana bread to give as gifts at school next week but before I could take a picture or package any up it was all gone! I will just have to make more and hide it better next time.

Banana Bread

3 large ripe bananas mashed
2 eggs
1/2 c butter melted
1 C sugar

1 3/4 C flour
1 tsp baking soda
1/2 tsp. salt
You can also add nuts to your bread if desired.

Mash the ripe bananas in a large bowl. Next add the eggs, sugar, and melted butter mixing well.

In a seperate bowl mix the flour, salt, and baking soda.

Add the dry ingredients to the wet ingredients. Mix just until moistened there will be lumps.

Pour into greased loaf pan and bake at 350 degrees for 1 hour. You can also bake in mini loaf pans for 20-30 minutes or muffin pans for about 20 minutes.

Oatmeal Dinner Rolls






This year I made a new batch of dinner rolls for our family Thanksgiving and they were a big hit! The recipe was passed to me by a friend who got it from her friend and I am passing it on to you with a few modifications.

Bread Machine Oatmeal Rolls

1 1/2 C water
1 stick butter
2/3 C brown sugar
1 1/4 C old fashioned oats
1 egg
1 pkg yeast (2 1/4 tsp)
3 C bread flour
1 1/2 C whole wheat flour
3/4 tsp salt

plus extra oats and salt for the bottom of the pan

Microwave water, butter, and brown sugar for 3-4 minutes.

Then add old fashioned oats and stir. Add the egg after it has cooled a bit. Let cool down to warm to touch then add yeast to dissolve (if you are using bread machine yeast wait and put it in on top of the flour)

Pour into bread machine then add bread flour and whole wheat flour and salt. If you have not added the yeast make a well in the flour and put it in. Put on the dough cycle and let rise. Grease pans and sprinkle with coarse salt and a few oats. I like to bake my rolls in muffin pans. Punch down the dough, make into rolls and put in the pan. Let rise again until doubled then bake at 375 degrees for 20 minutes.

I like to split the dough for one roll in half and make two small balls. After baking they pull apart easily for buttering!




This is a picture of the dough balls just out of the freezer Annabelle helped me make them so there are many different sizes!

These rolls can be frozen after baking or they can be frozen as dough. If you are going to freeze them as dough go ahead and shape them into rolls, place them on an un-greased cookie sheet (don't let them touch) and freeze for a few hours. Once they are frozen remove them from the cookie sheet and place them in a labeled freezer bag. On baking day remove them from the freezer place them in pans and let them thaw/rise for about 2 hours. Don't forget to place oats and salt in the bottom of your baking pan. The dough will rise as it thaws, once they are doubled in size you can bake them at 375 degrees for 20 minutes.

The Play by Play!

This is what a small cooking day is like! Extra planning and prep can make cooking day go smoother and allow for more production.

7:00 put stew beef and seasoning mix in warm water to thaw
7:15 went to the local grocery store
7:35 started laundry
7:45 gather supplies
8:00 started dishwasher
9:15 peel and cut potatoes and onion
9:20 place potatoes, carrots, meat, and seasoning in crock pot set to 8 hours and forget!
9:30 mix meat, cracker crumbs, onion, eggs, and seasoning, to make meat balls
9:40 cook meatballs in large pans with a little oil on Med Low until browned then add spaghetti sauce to barely cover simmer until meat balls are cooked through.
9:50 tried to cook two batches of meatballs one pan stuck terribly they were turned into regular meat sauce (I think I will use it for lunch today!) Down to one pan of meatballs at a time it's going to be a long day.
10:00 helped little one get dressed to play in the snow
10:15 third batch of meatballs in the pot!
10:20 1st batch of pizza dough in bread machine.
10:40 cook lasagna noodles
10:45 separate pizza sauce into 3 baggies.
11:15 separate Cheese into baggies
11:30 separate pepperoni into baggies (I am 1 pizza short so one will be cheese pizza only)
10:35 place cheese, sauce, and pepperoni baggies inside gallon freezer baggie labeled pizza kit, label 3 quart baggies for dough.
11:00 lasagna assembled and ready for baking waiting for oven
11:40 lunch break
12:00 Lasagna done and cooling on the counter
12:15 first pizza kit in freezer!
12:20 second and third batch of pizza dough in the bread machine (I am trying a double batch)
12:20 mailman delivered our amazon order Yeah!
12:25 4Th batch of meatballs cooking
12:30 cooled meatballs bagged and labeled.
12:40 changed trash and washed hands again!
12:50 fourth and fifth batch of pizza dough (for bread sticks)
1:00 refilled dishwasher
1:15 started chicken in oven for chicken rice stir fry and chicken taco rice
1:45 bag pizza dough
2:00 take meatballs to the garage fridge to cool down
2:15 start last batch of meatballs
Decided to finish the chicken meals tomorrow
2:20 start cleaning the kitchen! This is the part I dislike the most.


In the freezer at the end of the day
2 pans lasagna
3 pizza kits
6 bags meatballs with sauce
2 bags pizza dough for bread sticks

11 meals ready to go in the freezer!

How not to plan a cooking day!

The title couldn't have said it any better. Normally I plan a cooking day several days in advance, check my shelves, clean the house, and shop at least 1 day before cooking. Today however is an exception. We are having a snow day today and if we get everything the weather reporters are calling for we most likely will not have school tomorrow. Sooo I decided to do a little freezer cooking today and possibly tomorrow. When hubby got home this morning (he works nights) I quickly went to the closest grocery store (not a good idea for saving money) for some things I will need (I hope I didn't forget anything important). I don't drive in the snow/ice unless it is an emergency so if I am missing ingredients too bad!

So without further blathering here is my plan:

Dinner for tonight beef stew in the crock pot Done

Here is my recipe
1 to 2 lbs of stew beef
1 lb baby carrots
1/4 onion cut into rings and placed on top (my family doesn't like the onion but I do. This way I can have the onion without it being in their bowls too)
5 med. potatoes peeled and chopped
seasoning mix
1 can beef broth
1 T worcestershire
1 T steak sauce
Season salt and garlic salt to taste about 1 tsp.
Layer potatoes, carrots, meat, seasoning, and onion cook on low for 8 hours

I typically mix the seasoning and put it in a large ziploc baggie with the stew beef and then place it in the freezer. Then on cooking day all I have to do is thaw, add potatoes, carrots, and onions.



Spaghetti and Meatballs done
5 lbs. deer burger turned into meatballs for spaghetti
2 batches of garlic pizza dough for breadsticks

I will freeze the meatballs with spaghetti sauce so that all I have to do on cooking day is thaw the meatballs/sauce, cook the noodles, and bake the breadsticks.


ingredients needed
5lbs deer meat
Saltine crackers at least 3 pkgs
3 eggs
5 jars spaghetti sauce
onion
3 boxes spaghetti noodles (you can precook the noodles but I prefer to make them the day we eat)
mushrooms, green peppers, onions etc. to taste


Meatball Recipe
5 lbs ground deer/beef
3 pkgs saltine crackers crushed
3 eggs
1/2 onion grated
1 tsp. Fresh ground pepper
1 tsp garlic salt
2 tsp frech minced garlic
5 jars spaghetti sauce

mix meat, crackers, eggs, onion, pepper, garlic salt, and minced garlic. Shape into meatballs, cook over low heat in a lightly oiled skillet or pot. Once browned add enough spagetti sauce to cover meatballs, cover and simmer until meatballs are cooked through. Allow to cool, place in labeled freezer bags.

Pizza Crust with toppings and sauce attached in baggies done
3 batches garlic pizza crust
mozzarella cheese
pepperoni
1 & 1/2 jars pizza sauce


This is the first time I have tried this freezer cooking plan with pizza, I plan to freeze the dough as soon as it is done mixing (shaped in a ball) I will put enough cheese about 1 1/2 C, pepperoni 1/2 C, and pizza sauce 1/2 jar in seperate baggies attached to the dough bag to make 1 large pizza.

Lasagna (meatless because my husband doesn't like gound beef) done
box lasagna noodles
jar sauce
cheddar cheese
mozzarella cheese


Lasagna Recipe
1 Box Lasagna noodles
1 jar spaghetti sauce
1 4 C bag mozerella cheese
1 2 C bag cheddar cheese

Cook noodles until al dente
layer noodles, sauce, cheese, repeat ending with cheese on top.

Bake at 350 until bubbly on top about 30 minutes.

Allow to cool completely then place in the freezer to flash freeze. Once frozen remove from pan and put into a labeled freezer bag.

I will be assembling, baking, and freezing in 2 small pans 9" by 9" once the lasagna is frozen I pop it out of the casserole dish and put it into a freezer bag.


I planned to do some chicken dishes but they will have to wait until tomorrow.
